When Lottie was only 7 months we started making her these Spinach Oatmeal Pancakes and she has loved them ever since. We didn’t want to introduce wheat yet and we wanted to give her a nutritious meal that she can easily pick up. There’s only 4 ingredients and they are all healthy! It makes a lot so you can store some in your fridge and heat up throughout the week.
Spinach Oatmeal Pancakes
Ingredients:
- 1 Cup of Oatmeal + another 1/2 cup of Oatmeal optional at the end
- 1 – 2 Cups of Spinach (I mostly just fill the blender with spinach)
- 1 Medium Banana
- 1 Cup Almond Milk
Directions
Start by blending the oatmeal into a flour. You will use this as your base instead of wheat flour.
Next, add the banana, almond milk and spinach and blend until it’s smooth.
(If you like thicker pancakes, add an extra 1/2 cup of oatmeal to the blender after you’ve blended the wet ingredients above)
Heat the griddle to medium heat.
Scoop out the batter like you would regular pancakes into 4 inch circles.

Love this idea! I tried making them for Owen but I think I may have had the wrong ratio of ingredients. Are they suppose to cook all the way through and be the consistency of pancakes? For some reason my middle didn’t cook as well.
They are definitely gooy compared to regular pancakes. If I want them to be thicker pancakes I will add an extra 1/2 of oatmeal to the blender at the end. Try both and see which your babe prefers!

Thank you very much for sharing. I made it and ate it more than my baby :-). But one thing in almond milk has sugar. Is it ok for baby. Can I use formula milk instead of almond milk. My baby is 10 months
I definitely think you could use formula milk, if you try it let me know how your baby likes it!
i’ll be trying this out too! how long can you keep the batter in the fridge? or should i pre-make it all an store?
I pre make all of them and either freeze them or now, between my two littles they usually don’t last long!

Thank you for this! We will see how the little ones like the, in the am. I decided to make them into 2in pancakes, so they are less gooey and better for snacks.

Thanks for this recipe! I tried it just now and they taste great. However, mine turned out brown on the outside(even in low heat) and gooey in the inside. Any tips on how to make then better?
I would add a little more oatmeal to make the consistency thicker, Also when you put them on the skillet I use my spoon to spread them out a little bit so they aren’t as rounded, this helps them cook through better.
Love the recipe! But is this for babies with teeth or without? My son is 10 months and doesn’t have teeth yet but he likes to chew on pita bread and then spit it out.
I’ve given these to both my babies around 6-7 months before they have teeth. They love chewing on them, they are easy to bring with you to restaurants and you can freeze them if you want to double the batch and save some for later! They will spit it out at first, but soon they will learn to swallow!

Mine are super gooey to the point I can hardly flip, any ideas?
I would add more oatmeal when you blend it, or play around with the heat. If it’s too low they won’t cook through quickly.
